Cowhide
Cowhide is the outermost part of beef. Cowhide refers to the raw hide obtained directly from the slaughtering process of cows, before undergoing further processing such as tanning.
During the tanning process, the hide and skin are tanned and transformed into leather, which is supple, flexible, strong, and resistant to weather and microbial attack. The epidermis is composed of keratin connective tissue, which is relatively resistant to chemical and biological agents (microbes and enzymes). There are two types of keratin in the skin: soft keratin, which forms the hair root and the lower epidermis, and hard keratin, which forms the hair shaft. Soft keratin dissolves easily and is easily attacked by enzymes (e.g., alkaline proteases), while hard keratin is highly resistant to chemicals and enzymes, except for sulfides and keratinase.
The epidermis must be removed before tanning, typically using lime and Na2S. The epidermis can also be removed enzymatically using a small amount of lime, Na2S, and the enzyme alkaline protease or keratinase. The hypodermis is removed mechanically during the fleshing process. Fresh leather is composed of 64% water, 33% protein, 2% fat, 0.5% mineral salts, and 0.5% other components, such as vitamins and pigments. The most important component of skin is protein, especially collagen protein.
